I have seen some positive write-ups on another certain homebrew forum about using it to make Bitters etc. so interested to hear what people here think. Hello! We now have two homebrew clubs in Aberdeen. Brewdog (Gallowgate bar) have one on the last Sunday of each month at 3pm. I've been going along to that for a few years now, a very friendly bunch. Fierce are starting a HB club too, third sunday every month I believe, first one is tomorrow at 2pm....

I get marmalade from Fullers ESB, love the stuff. I think it's from the yeast, as i've managed to get some of that character using whitelabs 002.

Raspberries are a powerful flavour. I used 2 1/4 kilos in a 19l batch of stout last year and they overpowered it for several months. I wouldn't be surprised if the hop flavour and aroma are hidden by the raspberry rather than being absent

Low temperature, as you suggest, might calm them down a bit. You could try to release a little pressure prior to pouring by cracking the cap off a tiny fraction, then letting it sit for a few minutes. The hops will be fine without boiling, they have some antibacterial qualities. As long as your hands are clean, just pack the hops in the sanitised capsule and get them into the keg would be my advice. I'd keep separate plastic gear (buckets, tubing, bottling stick, etc) for sour beer, especially beer that has been exposed to bacteria (lactobacillus, pediococcus, etc).
