Re: Another End Of Year Brewday: Saison With Avec

I love a saison. Brew them regularly also - tends to be my table beer. I start ferment at 17C for 12-24hrs and then ramp it up a few degrees for the next 24 hrs. Then let it free rise in the warmer months by simply pulling it out the fermenting fridge. Letting them hit 30+C is great for the esters a...

Re: Bitters Definitive Recipes List

Certainly one of my top 5 brews, which I've made 4 times with little variation other than the yeast. It's on the palest end of ESB, and a little over for the style by OG, but only just! The WLP007 really makes it shine. Scarbadian ESB Extra Special/Strong Bitter (English Pale Ale) Recipe Specs ----...

Re: Bitters Definitive Recipes List

Not one that I know of - there used to be a recipe database on another site but that seemed to have dissappeared Just thought of this, it has a lot as well as other beers though http://www.jimsbeerkit.co.uk/forum/viewtopic.php?f=5&t=5022 http://www.jimsbeerkit.co.uk/forum/viewtopic.php?f=74&t=8174 ...

Bitters Definitive Recipes List

Hi all. There is a post of all the best Mild recipes on this forum. Does anyone know of one for Bitters? I love a good Best Bitter and ESB here in Australia. Bought a fresh litre of Best Bitters from a little brewery called Block 'n' Tackle last weekend and decided to try my hand a brewing one again...

Re: Christmas beer recipe suggestions please

Too late now, but for next year, brew a Patersbier (also known as Enkel and Singel) - a Belgian low ABV beer traditionally made from the second runnings of a Tripel. Add a small amount of the fruit ingredients from the Christmas pudding. I scoop a large tablespoon's worth (for a half keg batch) and ...

Re: Pale Mild Ale

Hi all, It's spring in Australia and my mild ale keg is about to kick. It's been a favorite brew for the winter (which is quite long in Canberra). I have mild ale malt and I thought I'd give a pale mild ale a try. I've only seen it at the Wig & Pen in Canberra. Is this a real style in England? If s...

Re: Pale Mild Ale

That depends entirely on what period of brewing you are referring to as initially all mild ales were 100% pale malt, had gravities of around 1050 to 1080 and were relatively highly hopped, it wasn't until the 1930's that the modern mild became into being and of a lower gravity due to post war influ...

Re: session saison

My success has always been with two types of yeast, or yeast plus dregs or a small starter from bottle dregs of your favourite saison.

Re: Gloopy beer!

Is it a good idea to have a weak chlorine bath permanently made up for storing utensils/tubes in like I have seen in a most breweries? I keep one while brewing and prepping yeast pitch, however, I use my sanitizing solution. I rinse under the tap and put in the solution as I go - use and reuse. Bef...

Re: Gloopy beer!

Def use a PBW or similar on everything (dismantled), even the bottles and kegs. It's possible that it's something that is isolated to your area, even your brew area and recently moved in. You may need to do a thorough clean of the brewing/fermenting area too. Having been through a similar issue but ...

Re: Liquid vs Dry yeast for Dunkelweizen

Def liquid. Dry lacks complexity and ends up with amplified banana or clove depending on the temp. Apparently the best temp is 17C. We did a side by side using same wort and temp, different yeasts brewed by a Australian National Champion brewer whose specialty is Weissebier. The liquid was by far su...
