The tap fairies finally got me!!

After a good number of successful brews without any major hitches today's brew day was going as planned. Mash went well, sparge was all good, boil passed without incident. Onto the cooling. Everything connected, fermenter sanitised and ready to take chilled wort. Pump on and away we go. It was at th...

Re: Cherry Porter

After a dig around online I found this on blog post on the Shepherd Neame website Nearly black in colour, the porter boasts a rich aroma of cherry roasted chocolate and a smooth cherry palate, created by a trio of ale, crystal and chocolate malts, along with the delicious flavours of Kentish Morello...

Re: Mash Thickness / Efficiency Question for APA

I started off sparging slowly (approx 40 mins) and my efficiency was just over 80%. Then as I got into the swing of things and started to cut corners a bit I tried faster sparging and dropped the time down to about 25 mins. This had a huge difference on my efficiency and it dropped to less that 70%....

Re: Over 2 hours in the mash tun - issues?

The same thing has happened to me several times. Kids parties that never seemed to end, emergency shopping trips and surprise visitors. Never had a bad effect on the final brew.

Re: Cherry Porter

Do you have the cherry extract yet, these things tend to be very concentrated? I recently ordered a plum concentrate for a porter and if I use it I reckon I will add it dropwise to desired effect after fermentation and leave a few days to determine. You can always add more but I definitely would no...

Re: Cherry Porter

Thanks. That is probably a good idea. I've always been one for jumping in with both feet before I can swim.

I've done several porters from recipes that others have created.

I was inspired to do this one after having several enjoyable pints of Shepherd Neame's Red Sails.

Vintage kit

I've just been and fixed an old boys printer for him, in doing so we got talking about brewing. It ignited an enthusiasm in him and he dashed off. A short time later he can back and presented me with this. http://images.tapatalk-cdn.com/15/11/06/daf453c48ecd09b22802cc463178b6f1.jpg http://images.tap...

Re: Understanding my water report

Thanks Aleman

I'll sit down later with a nice pint and try to get my head around it all. It's good to find somebody who knows what they are talking about that also has water similar to mine. Everything I had read before seemed to be related to reducing alkalinity.

Re: Understanding my water report

So...

I put the values in as given in the report and set it as if I was going to make a porter for example.

Is this correct?

And if so what would I be adding?

Thanks
