I started off sparging slowly (approx 40 mins) and my efficiency was just over 80%. Then as I got into the swing of things and started to cut corners a bit I tried faster sparging and dropped the time down to about 25 mins. This had a huge difference on my efficiency and it dropped to less that 70%....

The same thing has happened to me several times. Kids parties that never seemed to end, emergency shopping trips and surprise visitors. Never had a bad effect on the final brew.

Do you have the cherry extract yet, these things tend to be very concentrated? I recently ordered a plum concentrate for a porter and if I use it I reckon I will add it dropwise to desired effect after fermentation and leave a few days to determine. You can always add more but I definitely would no...

Thanks. That is probably a good idea. I've always been one for jumping in with both feet before I can swim.
I've done several porters from recipes that others have created.
I was inspired to do this one after having several enjoyable pints of Shepherd Neame's Red Sails.

I'll sit down later with a nice pint and try to get my head around it all. It's good to find somebody who knows what they are talking about that also has water similar to mine. Everything I had read before seemed to be related to reducing alkalinity.

I put the values in as given in the report and set it as if I was going to make a porter for example.
