Interesting. I simply chuck 1/2 a protofloc tablet into the boil about 10 mins before the end. Never noticed any jelly-like gunge. Why do you rehydrate, Guy? Two reasons, neither of them particularly scientific. Firstly because it seems to me it might help disperse the Protofloc faster in the boil....

My guess is it's the Irish moss. There's too much of it! I use Protafloc tablets, at a rate of 0.5-0.7 grams for a standard 23L brew length. That's about 1/4 of a tablet. The 1/4 tablet is put into a bit of water when the boil starts which rehydrates it. The slurry is tipped into the boil 3-4 minute...

MM Fresh wort kit arriving tomorrow
This will be interesting! One of the MM fresh wort kits will be here tomorrow. I've ordered it with a Wyeast 1056 yeast. Plenty of hops for dry hopping already in my freezer. The kit is OG 1.056 for 20 litres. I'll put an extra couple of litres of water into it to drop it to about 1.051. Really look...

The Hanna alkalinity checker I use can, apparently, give wrong readings if there is chlorine in the water.
So the brewing water is run into the HLT the day before brewing and left with the top off.
No idea if it really matters, but it's no hardship.

My water company, Bournemouth water, has confirmed there is no Chloramine in my water. It's well worth contacting your local water company to ask the question. Has anyone tried one of these? Next order I put in to MM I'll try the one I've linked to. 5.6% is a bit too much for me, so I'll dilute it down to 22 litres. As a starting point a beer of 1.045 OG will need about 4.5 kilos of grain. You can then use Graham Wheeler's beer engine to work out the fine details.
