I've a Dark strong currently fermenting and a Tripel that's not sufficiently carbonated, I'll be introducing it to some fresh yeast when I find the time.

Following on from my posts earlier, I've just collected Peracetic from a Dairy and Livestock supplier less than 5 miles away. I suggest you see if you have similar locally Eric.

I'm in the same situation as you Eric with Peracetic, fortunately I've managed to order some from a local Country store, unfortunately it comes in 25kg drums! Hopefully I'll be able to split it with other Norwich club members. It looks like they have a couple of stores up North. https://www.moleonli...

Good luck with your entries, the brewery is literally a five minute walk from the train station so very easy to get to.

As I write there are 35 places left in the competition, it's now open for second entries if you'd like an extra. Cost for the second is an additional £6.

When we first mooted the idea of holding our own competition we spoke to London Amateur Brewers for some advice, they told us the hardest aspect was to find a venue. Maybe it was at a later visit I thought I heard 70 for alkalinity.

It is, in it he says the incoming water is round 300 alkalinity which they drop to 90-100 with sulphuric acid, he didn't mention CaCl until asked about how they got the mash ph in range but they do add that to both mash and sparge. Sulphate to Chloride ratio ends up around 3:1 for most of their beer...

The intriguing thing for me is the alkalinity target. In previous conversations (we invited him to do a Zoom call with NAB during lockdown) he said the target was 90, now saying 70. I was surprised by this as the accepted wisdom for say a Bitter is 20-30. I asked why they went for such a "high" tar...
