Always good to see a returning brewer. If you like dark beers try Graham Wheelers Old Peculiar it really is quite special.

I might be wrong but I think I read somewhere that Hughes plagiarized a lot of his book.

I used the grainfather cleaner for the first couple of years. When I first moved used the chemclean a lot more gunk came out. Having said that I've never had an infection since I've had the grainfather.

Any other yeast will be an improvement over SO-4. Personally I use liquid yeast but always keep a pack of Nottingham as a back up.

I will be doing my 3rd brew with Ernest next week after being impressed with the first 2 brews. If I may make one suggestion try it with a better yeast than S0-4

Thanks for the update Dennis. What kind of yeast were you using for these beers out of interest?
Whitelabs yeast the Ernest beers were with WLP002 and WLP005 the Jester WLP005.
