I’ve used the yeast from bottles of PJ several times, top cropped and reused and always worked great.
Does any one know the name of the yeast St. Austell use?

I don’t think it’s to do with the stir plate, I’ve changed recently and still getting great results using 001, 005 and bringing on the yeast taken from bottles of Proper Job. Hi Guys, just wondering where the best place to have the PT100 probe on the HERMS? I’ve got hold of a couple of kegs and want to convert one in to a mash tun, so is it best to have the temp probe as the wort returns in to the mash tun or what if the probe was in a thermowell so it sits in the mash? ...

I capture the yeast the same way as described in the link from IPA’s post with a couple of differences. If I’ve pitched a 1 litre starter I get 2 jam jars and fill them using a SS ladle. I think the idea of recirculating the first runnings or ‘vorlaufing’ is to set the grainbed to make a filter and return any grain back into the mash tun so no grain gets into the boil kettle which apparently, can cause astringency. might be easier to google for a priming charge calculator online ( is there one in jims tools and calculators??) then you can simply add enough sugar to condition the brew to your taste without the need of such a valve.. So yesterday I added all the calcium sulphate and calcium chloride with the grain to the mash.
The remaining salts were added to the mash liquor.
The result was -
