Chevalier malt addition.

I rebrewed a Porter recipe recently (bottled today) and replaced some of the maris otter with chevalier malt. It turned out awesome. Waiting two weeks is not going to be easy.
I'm just here for the beer.

I get a sort of honeyness; I love the stuff.

Needs a good long mash in my experience; 90 mins or longer.

It really shines in historical recipes which isn't exactly surprising!

Not if mixed with some modern malt. I only mashed for 45 minutes and got the same O G as when I used strictly modern pale ale malt.

I just brewed this on monday. I did a 45 minute mash and ended up with 3.25 gallons at 1.040 instead of the 3 gallons at 1.042 I was shooting for.

I tried one of the milds a week after bottling. Carbonation is still a bit light, but the taste is great.
