What Hops would you not brew with again?
Have you ever been disappointed with certain varieties of hops, that you've either used as bittering, flavour, aroma. Which ones don't go with others, etc..

There's a lot to not like about Cascade, I agree. Overrated and overused, for sure. But if you'll endulge me, next time you put together a fairly hops-forward brew, use all your favourite hops exactly as intended, but then add 1 oz of Cascade at 30-40 min remaining. Not the whole boil, not right at then end, but there in the middle. It adds a really interesting tanginess used thus, a little peppery and grassy too, without so much played-out grapefruit.a-slayer wrote:In a word.. Cascade. Didn't like it at all.

Sonnet...read somewhere it was EKG like so used late in a northdown bittered simple mild. Just not getting anything from it, but admittedly that could be 'cos I've a lot to learn about mixing and matching my flavours. Perhaps this thread would be better with tried and tested combos that DO work? ?

Ditto. I was persuaded by reading GW's BYOBRA book to buy them as they seemed to be used in quite a few beers. Harsh is fair.Dennis King wrote:Target - harsh

I've never found a hop I really don't like. I've overdone a few and also had a few where I have thought "where are the hops?" but both of those are down to the brewer rather than the hops.
I brewed an all-Target beer that was just OK.
A single hop cascade beer is one of my favourites.

I've never like a beer with Nelson Sauvin so would probably never use it.
I love Simcoe though it does need to be used carefully.

My homegrown bramling X is really harsh, I'll give it a few more go's but not keen so far got loads of it.

What's wrong with you people nothing wrong with Target - one of the best Green Hop beers this year IMHO was the Old Dairy target green hop.
Back to the original question I`m getting a little fed up with Amarillo this and Amarillo that - probably been drinking too much of it.
