Columbus. If I could only use one US hop, this would be it.

I've recently discovered this hop, and really like it.

My favourite big hop has got to be Citra still.

Cheers

Can you suggest what ratio of bittering/flavour/aroma? Have both and would appreciate your advice!

Liberty, Cluster and Cascade are all aromatic and complex enough. I really like Chinook too, very pungent.

Discuss. Recipe details welcome.

Not many mentions for Cascade. Ive used it for ages and had some ace results with it. It blends well with most things and is damn tasty on its own

I can't really comment on cascade as I have never used it in my 5 years of brewing but it has never appealed to me as a hop, I think this is because when I started brewing I read in quite a lot of books and forums that cascade was getting brewed to death so I wanted do something different that's when Amarillo came popular and I fell in love with Amarillo so I have had no need to use Cascade. But I might use Cascade this year for the very first time I have used centennial loads which is meant to be a super cascade in flavour and aroma.

Well now if pushed for just one then right now it is Mosaic. Came across it in a beer by Adnams called, er Mosaic. Couldn't believe how much aroma I got off that beer so brewed with them myself and dare I say it, I think I got as much aroma as Adnams, bloody staggering and the best aroma from any hop I have used. =D> But Amarillo and even the US grown Australian hop Galaxy are star performers in the aroma stakes, but for aroma and flavour Mosaic "knocks it out the park" as you American chappies might say. :D

The only fly in the ointment is Adnams have nearly cornered the market in them over here.

American style IPA's, Blondes etcetera. Anything crisp and hoppy I suppose.

[-X The very thought appals me. Sometimes maybe you shouldn't do something just because you can. Reminds me of a conversation about Rhubarb I was having in a pub with some friends. One guy was asked "what do you put on your Rhubarb", "horse manure" he replied, my mate said, "really, we put custard on ours".

So i guess that's a BIG FAT NO! Then   I am brewing a Imperial American brown ale this year and I am looking for something out of the norm, I have so far got either simcoe or Magnum for battering and Anthumn for Aroma but I still need something fruity and rich to complement the darker Roaster malts in the grist Maybe cluster or Eldorado?
