I would liken them more to a high alpha Amarillo. Fruity with a spicy hint, a little pine......I like it a lot :D
They are very resinous and pungent and work well both as a bittering hop and as a late addition.
If you can get hold of Scarlet Macaw by Oakham (which is a superb beer btw), it will give you a good idea of what the hop is all about.

I made a great amber ale with summit, simcoe, and saphir.
I'm just here for the beer.

did a single hop with summit a while ago, it went down very well though was a little hazy, possibly due to hops.
5.00 kg Pale Malt
0.25 kg Cara-Pils
0.25 kg pale Crystal Malt
15g-FWH
25g-45min
60g-60min steep
50g secondary ferment (7days)
50g in cask
SA-05
just made another batch.

That's a great description. Summit is a near-perfect American-style IPA hop. Loads of personality and no real flaws. Plus is grows great, even organically.

Summit hops are also used in The Alchemist's Rapture Brown IPA (you know, the Heady Topper guy John Kimmich?)
For that matter, Kimmich used it on your side of the pond too when he collaborated with Adnams on "Enraptured" for JD Wetherspoons.

Look at this who's-who list of beers containing Summit hops:
Alaskan Brewing IPA, Altamont Left Coast Session IPA, Austin Beerworks Fire Eagle IPA, Beavertown Black Yeti, Boulevard Unfiltered Wheat, Bristol Beer Factory Bitter Californian, Buntingford Polar Star, Captain Lawrence Smoked Porter, Crouch Vale Summit, almost everything Deep Ellum brews, Lagunitas IPA, Port Brewing Wipeout IPA, Mad River Flor De Jamaica, Magic Rock Cannonball, almost everything Morgan Street brews, Northern Brewer Black IPA and Imperial Stout, Red Fox Braintree Gold, Santa Fe Happy Camper IPA, Schlafly Organic Pale Ale, lots of Shipyard recipes (an Alan Pugsley brewery), Stone Bitter Chocolate Oatmeal Stout, Summit Horizon Red Ale, Tommyknocker Pick Axe IPA, Widmer Drifter Pale Ale
