Best Yeast to use for a Leffe-ish brew?

Something which helps recreate that classic dry chalky pallet feel, or at least that is how I kind of describe it! :)

White Labs Trappist WLP500, build a nice large starter and keep the fermentation temp under control

OK, you'd mentioned Trappist in my other thread viewtopic.php?f=5&t=24920#p281329 but I wasn't sure which one, and with a bit of searching finding quite a few yeasts could be recommended for a Leffe-type brew.

I recently used Wyeast 3942 to brew a Belgian Single Gold beer and was very pleased with the results. Another yeast I could suggest is Whitelabs Belgian Blend WLP575 which I'd previously used for a similar beer although this strain produces slightly more phenolic character than the Y3942. And as mentioned above WLP500 is proven with this style and a fellow craft brewer produced an excellent Belgian Gold style using this strain. But don't consider attempting to use S33 dried yeast for any Belgian beer; it just doesn't produce the appropriate fruity esters.
