Mangrove Jack's California lager yeast

Post by Bazz » Tue Oct 11, 2016 2:16 pm

I'd not seen much reported use of this yeast but thought i'd give it a try on a recent cream ale (ish) brew, well it had a cream ale grist but a fair amount of late and aroma Cenntinel hops chucked in, results: I like it, I like it a lot!

It ferments pretty fast and drops like a stone, most of the brew went into a keg but the few bottles that i did cleared in super quick time with just the slightest hint of yeast stuck to the bottom of the bottle, and what a clean taste, could be good for more hop forward pale ales as well.

I got another packet to try in a pseudo-lager hopped with Cascade, if it turns out well i don't think i'll ever bother brewing a proper lager.

That's good news, I have ordered some to use in the near future.

I have used wyeast 2112 (california larger) for a few years, which I believe to be the Anchor brewery yeast. This is very clean and flocculates well. Attenuation is a little low, so leaves a residual sweetness. This works well in a malt-forward bitter.

I have been trying Mangrove Jacks California Larger yeast as an alternative. The first brew worked as expected: medium attenuation; high flocculation.

I re-pitched the same yeast into a bitter and I am getting a few esters. Actually, it has a hint of raspberry jam to it! The Special B and Crystal Malt is giving some of the flavour, but there is a subtle fruit flavour which I assume is from the yeast.

I used this for a second time last week in "pseudo lager" (it's a sort of lager APA hybrid), the grist was 90% lager malt and 10% carapils. This yeast has taken it from 1.046 to 1.007 in a week, according to Brewmate that's 83% attenuation, should hopefully make a nice dry, hoppy lagerish pint.

Fermenting temp was 18degC for a week then raised to 20degC for 2 days.

Recipe was:

90% Lager malt
10% Carapils

Cascade 15g @ 60 mins
Cascade 20g @ 20 mins
Cascade 20g @ 10 mins
Cascade 25g @ flame out.

O.G. 1.046
IBU's 28
75 min mash @ 65degC
60 min boil.
