What yeast to use?
Re: What yeast to use?
Stepping up a little slurry from a mini starter is likely to rejuvenate the yeast for a more predictable fermentation

After this I am definitely doing a starter for every slurry repitch unless it is under a week old.
Tomorrow will be day 14 - it's down to 1014 and STILL bubbling!
It tastes good, no infection flavours, just the slowest, ambling fermentation I have ever seen!!!

So I gave up on day 18 - it was still breaking wind occasionally!
Kegged and checked FG - down to 1012 which is fine. Lesson learned!
I've got a big harvest of WLP002 which will be 8 days old when I need to brew. Would you recommend a starter for this?
