I have a Prestige hi-dome and love it. I can just squeeze two one-litre kilner jars into it, or a single one-litre conical. I fitted a pressure gauge on the lid and can confirm that the heaviest weight gives 15psi if it's hissing loudly but intermittently. If it's just whispering along then the pressure drops quite a bit. Too much hiss sends it over.
Yes, for canning wort the lids should be loose-ish. Wet them where they touch the glass. Then, when the pressure cooker cools down, they should be sucked onto the jars giving a perfect seal. Thanks guys for your info. I bought the high dome from Argos this evening.
I'm new to using pressure cookers - if I want to use sterilised water for yeast washing etc - can I boil a kettle of tap water, fill a jar then 'cook' in the pressure cooker for 15 mins once steam is coming out of the vent?
Also the water used in the cooker for steaming - can this again be tap water (London levels of hardness!)?

Distilled water is better. Lids on any jars must be loose. Jars no more than half full. I'd let it go a little longer than 15min, say 20-25 minutes. If you're using an induction hop, heat up very slowly on low-mid.

Best to use a deionised / distilled water with any form of clave. The All American Canners are the best IMO on the market.
Keep the smaller Argos one for everyday things (a lot quicker to heat up & cool) & then buy the largest canner you can afford. (extra luggage cost?)

hmm seems there is this Hawkins big boy also available in the UK. The company doesn't recommend it for canning but if it runs at 15psi then surely it will do?
