Going to be doing a kolsch this weekend- does anyone use acid malt? was thinking of about 3% to get mash PH down to where its needed ( tesco Ashbec water) grain bill of 92.5 pils, 7.5% wheat. That and a little Calcium carbonate.

Why are you adding calcium carbonate? I'd add some calcium chloride if you want to bump up the calcium. Otherwise you may not need it as a kolsch is supposed to be lagered
bottled my porter made with this yeast today - 2 weeks @17c, 9 days @4c . 2 packs pitched straight in, OG 1.054 FG 1.012 so 77% apparent attenuation

OK. Interesting. My FG reading was 1006 - but it was my first use of a new hydrometer and I used a trial jar, rarely bother, wonder if I got a fake reading? The beer is 10% crystal, i'ts not super dry but it's dry for a beer with 10% crystal.

Interested to know what the Kolsch is like in a pale ale. I have been getting 78/80% attenuation brewed without any crystal. I have 2 on the go with wlp0029 to compare now. Not had any issues with the us pale.
