Doh, note to self, read the label!

Post by chrisbjones202 » Sat Feb 03, 2018 10:30 am

Made a starter in the week and just realised I put a pinch of pectolase instead of yeast nutrient in it (same wilco pot).

It's grown fine, will it negatively affect my beer? I've got a mash on now?

I'm not aware of any impact of pectinase on yeast cells. Pectins are plant specific molecules so you should be good to go.

Thanks, I've poured off most of it and pitched the yeast. I'm sure will be fine.

The only thing that occurs to me is might it attack some of the head retention proteins??

There's no taking it out now, there was only a pinch in 1200ml and I tipped about a 1l out before swilling.

It's a Dennis King Galaxy(ish) delight, not too bothered if there is no head, the galaxy should make up for it.

Adding pectin has been proposed to stabilise head foam, Jim, but the proteins responsible for 'normal' head retention aren’t attacked by pectinase. The main issue with adding pectin, though, is it can promote beer haze. Hops are the main source of pectins in beer. Hence hop haze when beers are heavily hopped. Adding pectinase post fermentation might have some benefit here?

That explains a lot, when I started to cool my starter wort it was still cloudy where normally it would have dropped clear. I reboiled it as I though I'd not done it for long enough.
