I know this is a beer forum, but I also know that some among our number are also winemakers. :D

Donkey's years ago I made some rice & raisin wine using a recipe out of C.J Berry's brewing book and it was excellent stuff (blew your brains out, mind!).

Has anyone else brewed up rice & raisin wine?

Rice wine is actally very easy to make although you do have to take care it does not turn out too dry...

Rice and raisins or sultanas and some suitable brewing sugar are the typical ingredients and as it brews quite vigorously, you can ususally go for a brewers bin with a lid and avoid the demijohn and airlock...

I quite like the taste of saki, which of course is rice wine, so I may have a go at making another batch of rice and raisin. I chucked out some of my winemaking stuff :blink: before I moved house, so I probably need to but a few things.

When you say 'brewing sugar' is that special stuff for winemaking or just household sugar?

Just ordinary Cane sugar... Rice wine can be couldy anyway owing to inimical proteins in the rice... You're just may double your trouble if you use beet sugar which can add an off taste and can trigger more cloudiness...

Be prepared to get the filter paper out!
