Elderflower champagne - gloopyness problem

mmm....i am about to bottle mine after 48hour in the pot, so will let you know what it looks like. Trouble with this stuff is the worry about contamination! since the elderflower, lemon etc get in there as such, very little sterilisation here.

i am also assuming that due to poor fermentation (the only one are from the flowers) the result should be very sweet, is that right????

Why are you bottling after 48 hrs ??? you should be following your sg readings and only bottling after ferment has ceased then sugar priming the bottles for carbonation. Follow the guide line in this link for sparkling wines http://www.winesathome.co.uk/forum/show ... php?t=2012.
Continuing as you are is going to produce a low alcohol foaming disaster.
