Why are you bottling after 48 hrs ??? you should be following your sg readings and only bottling after ferment has ceased then sugar priming the bottles for carbonation. Follow the guide line in this link for sparkling wines http://www.winesathome.co.uk/forum/show ... php?t=2012.
