Well, this is my first foray into wine making. It'll be interesting as I don't drink the stuff, so SWMBO will be the judge of this one... Any pointers, dos and don't appreciated...!
1 pint elderflowers
250g chopped raisins (had to use a handful of sultanas as I didn't quite have enough)
2 lemon rinds
1 campden tablet
8 pints boiling water
Leave to stand for 3 days
Then:
3lb sugar
Juice from the 2 lemons
1 tsp tannin (I'm gonna make a strong 1/2 cup of tea and throw that in as I don't have any tannin...)
1tsp yeast nutrient
1pkt champagne yeast
Strain into a demijohn and put under airlock for 5 days and then rack off into second demijohn with another campden tablet and leave until SG=1000.
Mine is currently in the "leave to stand" phase - it smells, well, interesting. It's an off brown colour, and has an extremely strong smell of elderflowers and lemon.... hmmm
