Hi Betty,

I hope your well?

We use the below recipe and it has always turned out lovely (so far!)

10 heads of elderflowers or 25g dried
4 litres of water
2 lemons
650g of sugar
2 tbsp of white wine vinegar

Dissolve sugar in warm water and allow to cool, squeeze juice from lemons, add the juice, zest, elderflowers and white wine vinegar into the water. Top water up to 6 litres. Cover and infuse for 4 days, if using dried elderflowers add yeast, if not check to see if fermentation has started. Leave to ferment for 4 more days. We put a bit of sugar in each bottle before siphoning.

Thank you Carphunter for your reply ;; i am getting everything together and will keep you posted on how it turns out ;;better than my last lot i hope as i had 6 mouldy litres of it x
