TC Fest My House NOW!!!!!

Hello Everyone,
TC Fest on right now! All Welcome! Come on down!
Passion Fruit TC 6.5%
Peach TC 7.9%
Polish Apple juice TC 7.1%
Raspberry TC 7.4%
Blackberry TC 5.7%
These have only been in the bottles for 17 days and 19 days but they are Bloody Lovely Mun! Very drinkable, good hiss on opening, Smoke? CO2? in bottle neck when opened. (Could be smoke because these will put fire in your Belly)! :evil: :twisted:
I accept the fact that people on here have helped me in my brewing efforts, but I sometimes question the `2 weeks warm, 2 weeks cold` thing, these have had 17 days and 19 days warm because I`ve been away, It is TC after all, and if it Smells nice, Tastes nice then why not drink it when `I` think it`s ready? Blah Blah Dribble dribble, Ooops Sorry about that, TC always does that to me! (and `3 Gall Stout` Ha Ha) :D

Hello Pinto,
It was not intentional (bloody hell mun,that`s a big word at this time in a taste test) to make them so strong but that`s the way thay came out so what the hell! They are Bloody Lovely mun! I`m trying to watch one of my favourite films as I type this (BBC1 Fallen) trying to type as fast as I can with one finger, one eye shut, neck at a crazy angle so that I can see TV and PC, then Mrs Ales says something absolutely fantastic `Why don`t you pause it, you`ve got Sky remember`! F@ck Sh!t and Pi$$, Why didn`t I think of that! It`s taken me 24 minutes to type this little message! Rock On TC!

Ah, 2wks/2wks is optimal for the recipes I do but nothing is this game is writ in stone.
Tell you what though, if you think they're good now, try to save a few bottles for 3 months, they'll blow your mind.

I just ordered 5l of Suma concentrate for an 8way taste test round christmas time. Each gallon will have 625ml suma, 500ml cranberry (voted best adjunct in recent 6way test), 1tsp tannin, 1tsp nutrient, and yeasts will be Young's cider vs Gervin D vs Muntons Gold vs some red wine yeast yet to be decided. Hang on you say that's only 4 varieties, yes, but each will be 1 gallon straight and 1 with a bit of potassium or calcium carbonate to reduce the acidity! Or 1 with a bit and t'other with bit more - got a trial batch to bottle this weekend that'll decide that.

I stand corrected, it was 5 pints not 7, Mrs Ales said to me this morning `how were you so drunk after only 5 pints?`, the other 2 bottles I counted were from a previous taste test!

It happens Wales I brew wine sometimes and I aim for 12 % end up at 22% give the wife a glass she's pissed as a fart after one

How the F*ck do you end up with a cider at 22%? That's pretty impressive and what yeast are you using to get that high?

Gervin GV4 will get you to 22%.... just

Other choice would be to make TC using turbo yeast...

Tastes like you'd expect - very sweet, potent apple wine ! Search for "sui-cider" and you'll find the recipie I used. Going over 20% needs careful feeding, lots of nutrient and patience as the yeast is really struggling at that ABV

I should imagine TC with turbo will taste like crap as normally you treat turbo brews with granucol to take away the off flavours, which you couldn't do with a cider
