Hello sbond,
Before you freeze them, wrap them individually in cling film, then they won`t stick together in one big lump in the freezer!

Re: Freezing elderberries
Just put them in an airtight bag or container and freeze them.
If your planning on making wine from them then I suggest gently using a potato masher to squash the berries so as not to beak the seeds, otherwise there will be a huge amount of tannins released which will take years to fade.
Don't expect a fast drinkable wine, last time I made elderberry wine it really didn't come good till 2 years had passed, then it was a fine drop.

Freeze 'em loose on baking trays then bag them so they stay free flowing.
