bit of an experiment.
bear with me...
I had a few vials of liquid yeast in the fridge, out of date ,to use.
I made a small extract mix to work as a starter and as a mix with some juice for a fictional drink...
starter was
300 g DME
2.5l water
5g glacier hops.
2 tsp nutrient
boiled for 20 minutes then cooled.
used 800ml of this "starter" with
2litre princes apple and pear juice
200g normal sugar.
will add and top up with more apple/pear juice later.
fermenting with EC1118 a wine yeast I think.
wish me luck! haven't worked out the target abv from that mix yet.

Took a gravity reading tonight. Has gone down to 1006 or so. Not gone as far as other ciders I think as I added the malt extract and have used a wine yeast... perhaps not fermenting the maltose properly?
Taste and smell is a bit grim at the moment - still quite sulphurous and obviously not finished yet.
Picture of all three samples tonight. This one is the first on the left. One in the middle is an apple/mango TC done with a hefe yeast. on right is coopers dark ale tweak.

First proper taste tonight.
I bottled this a few weeks ago. Tried the first tonight.
It is clear. Tastes quite vinous. lot more sweetness than I would expect with a cider. not sure I could detect the hops. shows promise I think. Have to work through the rest to make up mind and plan next version
I fermented this with a wine yeast so perhaps thats why it has not finished off the malt?

Not sure. Will need to try another one. I think the happy accident of using wine yeast has led to a very different drink than if I had used cider or ale yeast
