My Blackcurrant TC was made with no heat control. I used to make them before I bought heaters, so I thought let`s try it again.
Just wrapped the FV in a big duvet in the front room, ambient temp 15 - 19deg. Doing it again with this one!
Don`t even look at it for 2 weeks!

Did you carbonate? If so, bottle priming or CO2 dispense?
Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Mostly Canadian whisky until I start brewing again.

Batch prime: I must be getting old, because that's what I thought I was writing when I wrote bottle prime.WalesAles wrote:Lari,Laripu wrote:Did you carbonate? If so, bottle priming or CO2 dispense?
Batch prime 120gr sugar.

Cool. It sounds like a nice drink. Is there any sweetness left in it, or do the flavours give the illusion of sweetness? (The latter, I find, is common with mead even when completely fermented to dryness.)
What yeast?

Sorry for the late reply.
There is sweetness in it, I think the extras take off the sharpness!
My Neice had a small bottle today and she said `It`s Beautiful, It`s Beautiful`!
Yeast was Youngs Yeast and Youngs Nutrient. 3tsp of each.

Re: Christmas Cracker TC......
I've used that Polish Raspberry Syrup to make two 5 litre batches in 2013 [looking at my trusty spreadsheet of brews to get the date]... apart from brewing sugar i added no extra ingredients though. It took ages to ferment out for me, but that's probably because I didn't control the temp very well and didn't use any yeast nutrient either. But the wait was worth it, one batch came out at a banging 7.8% and was really nice. Seeing this has made me want to knock another batch up now. I've got two bottles in the garage actually if memory serves me correct!
