Gelatinous Fruit/Vodka Infusion

Has anyone had problems with vodka infused with fruit becoming syrupy and forming gelatinous clumps?

I've had it happen with a peach/vodka infusion with additional sugar to make it into a liqueur and a strawberry/rum infusion with no additional sugar.

Does anyone know what this might be and what might have caused this?

I had jelly babies in trub, which I solved.

The solution to the problem is this.
Eat the fruit for breakfast and drink the vodka in the evening :D :D
