Nice! Good to see someone writing about beer instead of wine for a change!

Yes I use a lot of beer and TC in cooking but rarely wine. TC can be used for the vast majority of recipes which call for white wine and beer is usually good with beef, lamb and even pork. Both are good for making bread as well.

But why would you ruin beer with pollack???

Could that be that there is no decent fish left around the UK worthy of eating?

Sorry but i'm spoilt out here and had to poke fun :=P

Would be a good recipe for snapper though...

Pollack apparently isn't bad. A bit like cod.

:D
thats nothing....a couple of weeks ago, he was serving mirror carp as a main dish to a group he had round for dinner
I like hugh tho.....funny to see him jump out the land rover once to check out a "roadkill" rabbit - and take home for the pot - only to discover it was slightly "flatter" than he really wanted so had to use it as eel bait...
He does often do features with alcohol though such as ciders....wonder if he's ever tried TC!

I'm not sure cooking with TC would be a good idea, if it didn't melt the pan I'm sure it would spontaneously combust as soon as you showed it to the cooker
