SEYMOUR VEGETARIAN WHITE CHILI
≈2 Tbsp....................light-tasting olive oil
qty 1.........................fresh red onion, chopped
qty ½........................fresh green bell pepper, chopped
qty 2.........................fresh garlic cloves, chopped or pressed
≈10 oz (1-2 cans)........mild green chilis, diced
6 cans.......................Great Northern beans, drained and rinsed (white, obviously)
2 ½ Tbsp..................cumin, ground
several shakes...........oregano, dried
several shakes...........crushed red pepper
several shakes...........black pepper, coarse ground
≈4 cups (1 box)..........vegetable broth*
≈2 cups (1/2 box).......Roasted Corn and Pepper broth (optional, but a nice addition if you can find it)
≈½-1 bottle................decent pale beer, Schlafly Kölsch is perfect
2-3 Tbsp....................corn starch and/or powdered milk as thickener, to desired consistency
2-4 cups.....................Monterrey Jack cheese, shredded (can substitute other white cheeses)
≈ 2 Tbsp.....................parsley, chopped (fresh is best)
Heat oil in large heavy-bottom pot, high heat. Sauté onion, green pepper, garlic until translucent, around 5 min. Stir-in green chiles, beans, cumin, oregano, red and black pepper. Continue to cook-down at high heat for several minutes, stirring-in a little broth if necessary. After several minutes, add all the broth and bring to a short boil, then reduce heat. Add beer, corn starch and/or powdered milk, to taste. Simmer for a couple hours if you can stand it—the longer the better—stirring periodically. Shortly before serving, add cheese, stirring constantly, scraping the bottom as it melts. Last, stir-in parsley. Goes great with applesauce, beer & sweet potato waffles, sourdough bread, tortilla chips or crackers.
*this ingredient is the trickiest and really affects the overall outcome. You're looking for light color, some thickness, but smooth and neutral taste. Too much tomato, potato, carrot, peas, or big chunks will make this into a generic vegetable soup.

Woo hoo! I just won the Tiki Cup Chili Cook-Off last night with this recipe! I must confess it might've had something to do with the beer-and-sweet-potato waffles I made to go with it, but still, pretty impressive that a vegetarian would dominate a chili con carne contest in a room full of meat eaters!
