Hi,
I'm just doing my 2nd brew, my first went vinegary and had to be slung so maybe I'm being a little paranoid but....
I made a yeast starter Yesterday and have just smelled and tasted it and it's got a definite vinegary taste and smell to it.
I’m just in the process of bringing the wort to the boil so panicking a bit as I’d rather not use this.
I have some dried yeast in a sachet, could I add that at fermentation stage instead of the yeast starter? Could I in the next 90mins make a new yeast starter, is it worth it?
What;s best? Help!

you could make a flying starter.go to technique at the top of the page,then fermentation and you'll see how jim does it

I'd be tempted to chuck in the dried yeast this time rather than try and get something done in a rush.
I make starters from slants but keep a pack of safale 04 in the fridge just in case I'm not happy with the starter when it comes to pitching (hasn't happened yet).
Has your starter settled out? If so you could pour off most of it add just add the yeasty bottom centimetre.

@mat69, life saver! With your swift reply I did have plenty of time, many thanks! It's all done and the yeast is in, had a swig of the bottom of the bottle and it tasted good. Not like the other one, so glad I didn't use it and I think I have now finally worked out what infected my last batch. Were you oxgenating the starter with an air stone or a stir plate?

Using 40 grams of Spraymalt and 300 ml of the boiled water, then after a jolly good boil cooling it down and adding with the yeast to a demijohn. Leave for a couple of days.
I won’t do it again, the flying starter is much better for me especially as I’m only at home weekends.
