I brewed a pilsner lager on 1st April using a bit of kit I made for decoction mashing,(The 1st time I used it for a wheat beer it turned out fine) 4 temps from 40c-73c
Stats for this brew are as follows: Og 57 FG 18 Brewhouse efficiency 82% 2 litre starter at 1040 and used WLP 800. pH after boil 4.9 (too low)
At the moment there is a lot of yeast in suspension and the beer has been sitting at about 11c for 26 days Beer not off
Any suggestions please?
BTW Grist was 80.4% lager malt, 10% Caramalt, 5% Wheat Malt, 2.3% Flaked Barley and 2.3% Acid Malt

Hi mate,
I'm sure it's fine just the yeast taking its time. I would ramp the temperature up a bit and give it a diacetyl rest for a couple of days which will also encourage the yeast to finish off any remaining sugars.
Best not to rush it before crash cooling or fining I would say

Yes did the diacetyl rest at 19c for 3 days then crash cooled for 3 days.
Just bottled at 1014 so 75% attenuation.ABV 5.8
Still quite cloudy although a lot of yeast has dropped out.
Primed at 3.5grams per litre and now warm conditioning at 17c
Tastes fine for a green beer
Fingers crossed it will clear after lagering
