Any thoughts on this "IPA" Recipe I have come up with using hops from Poland?
For 25l
BIAB stepped mash
90 minute Boil
Efficiency- Braumeister..72%-ish
OG 1.051
ABV 4.9%
IBU 42.3
Bitterness ratio 0.85
2.7 kg Pilsner malt
1.4 kg Munich
0.5 kg Carapils
11.4 g Junga @ 12% First Wort Hop
8.5 g Marynka@ 9.4% First Wort Hop
8.5 g Marynka@ 9.4% boil 45 mins
8.5 g Marynka@ 9.4% boil 15 mins
8.5 g Marynka@ 9.4% boil 5 mins
8.5 g Marynka@ 9.4% flame out
Steep 30 mins
15g Marynka dry hop 3 days
13g Mangrove Jack US West Coast M44

different malts?
I was going to buy the Pilsner malt and the Munich, should I bother? I have plenty of Golden Promise and Maris Otter, some bought crystal malt and also some crystal type malts I have made at home plus a couple of kilos of mild ale malt that I haven't used..........

Re: Polish IPA
Lower the Carapils to 200g and up the Pilsner malt to 3.0Kg. That's a great underused hop that is not one of the sexy hops hence it is usually cheap to buy. Not sure how it works as a stand alone aroma hop as I used it once for bittering a Guinness Clone with success.

Certainly reduce the carapils as mentioned, I'd ditch the carapils completely and up the pils to compensate
assuming its german lighter munich and not british, it'll be fine in the amount you've used in an IPA I think
Stepped mashes are still very useful, although some rests aren't needed like protein/acid rests etc.

Thanks for positive feedback and suggestions.
I have the stepped mash schedule on the BM computer which is what I have used for all the beers I've brewed so far, and they've all tasted pretty good, but I am always open to suggestions, and I am thinking of using a different schedule when I brew some stout this winter (15 minutes at 49 C, 60 minutes at 66 C and 10 minutes at 76 C).

Ahh, yeah that makes sense.
I wonder what character Polish yeast strains have. I'd guess from 'typical' continental beers it would be more of a lager strain.

Quite right McMullan, that was the idea, Polish hops= Polish IPA.
Not sure I want to brew Grodziskie, the smoked wheat beer that seems to be the Polish speciality.

I asked the same question after being given some Junga with a beer style suggestion of a Polish IPA. I also got some Lubeklski and what happened next you might very accurately guess.
My efforts resuted in something with no sign of finesse, quite rough really. By calculation it had 62 IBU at an OG of 1050.
Drinking it right now and it's calmed somewhat 6 weeks since brewday.
Not one I'll quickly forget nor be in a hurry to remember unless it changes much more.
Mine is not the same recipe as that by the OP, so could be very different.
Yeast used was from a West Yorkshire brewery.
Without patience, life becomes difficult and the sooner it's finished, the better.

I've made a lager with Junga hops and Saf-23 that was very nice indeed. That's the application that springs to mind when I google specs. Apparently it's a Saaz derivative.
