Does anyone know what DAP is? It is an ingredient in making Belgian Candy Sugar for Abbey type brown alesLeffe Brun, Chimey etc.They use the term and it must be common in Canada, that is the HB sites that mention it.Iguessed Dried Apple Powder?

Di Ammonium Phosphate. used to promote the Malard reaction.

yeah, it's sold by homebrewshops as a yeast nutrient for wine, easy to get

Now you know what it is, there's an interesting blog where the author recommends DME as the protein source for making candi sugar, saying that it fuels broader Maillard reactions than DAP, with a resultant wider range of flavours. I've got some lime and DME ready to go for my next experiment, also the first using an alkalai rather than acid.
