hi all thinking of brewing a English pale21l brew on the lines of
3800g pale malt
1oog crystal malt
13g magnum hops 60mins
15g pearle hops 60 mins
50g celia hops 20 mins
english ale yeast
how and where to add peaches and how to prepare them any ideas thanks

I have recently done a Fruit beer. I decided to get frozen fruits. But as far as I know, cut them into chunks, freeze them, add them frozen. Apparently the ph of the beer will be low enough for any ill effects.
Alternatively pasteurise them and add them as a pulp. But will make the transfer messy.

Oh and add them after fermentation. Peach is a very subtle flavour (imo) and could get overwhelmed if added too early. I left my fruit for two weeks and seems ok.

I've read that peach flavour is almost non-existent when fermented in beer, and that if you want a peach flavoured beer, use apricots.
When I add fruit, I add to the secondary, after primary fermentation is over. (Frozen is ok, worked for me.) After a month of contact, I siphon to a tertiary fermenter to clear the beer. So my fruit beer takes 11 weeks until bottling; but they're usually around 7 to 8% abv.
I'm planning a dark raspberry wheat to be brewed around July.
When I add fruit, I add to the secondary, after primary fermentation is over. (Frozen is ok, worked for me.) After a month of contact, I siphon to a tertiary fermenter to clear the beer. So my fruit beer takes 11 weeks until bottling; but they're usually around 7 to 8% abv.

I use frozen fruit, mainly wild blueberries in a porter I thaw the fruit in the microwave then lightly mush it using a potato masher. As advised, ferment out then transfer beer on top of the fruit in a secondary. The pH and ethanol content normally deal with any unwanted microbes. I'm not sure you'll have sufficient ethanol in your planned brew to guarantee that, though. I too have read use apricots instead of peaches in beer. That considered, you might want to opt for a pasteurised Funkin apricot purée:

thanks all looks like secondary is the way to go apricots it is then thanks will have a bash at this very soon

One of our club members is a cracker at sour beers and he won a European cup for his peach sour which was lovely. Lately he brought to a meet a peach sour that he had also added in the peach stone as well and the beer had a distinctive nut flavour along with the peach.

was chatting to the lad who made the beer and while we all liked the nut taste he hated it. Asked did he know about the cyanide and he said "yes but sure I was o ly trying to thin the herd of weaklings". Only the strong survive
