I'm get back into brewing again, and recently bought some melanoidin malt. But I'm
wary of using it after reading it can give "off flavours".
Any advice appreciated, I'd like to brew a smooth brown ale, cheers.

Not that I’ve heard of. Like most special malts its all about percentages in a beer

I would use about 5%
