Managed to get a brew on today for the NCB meet at the Saltaire Brewery.

White Labs WLP090-San Diego Super Yeast

All in a l a smooth brewday. Going to dry hop after initial fermentation has calmed down then dry hop the cask.

1st time using Crisp pale ale malt

now this is the last of a bag of TF MO. Thought I'd do a side by side to see if there was much of a difference?

As it turned out they looks the same! Who'd a thought eh!? lol :D

Grain bill. As recipe above 90% Pale malt, 4.4% caramunich II, 3.8% Amber malt, and 1.8% wheat malt

The idea for the grain bill was to start with the grain bill for dog fish head 60 minute which is 95% pale with 5% Thomas Fawcett (very specifically TF) amber malt. I thought this would give the malt of the beer an interesting character but I wanted a little bit more so a bit of caramunich would boost the malt backbone and add just a touch of sweetness. Wheat malt was for head retention.

Mashed relativly low to aid attenuation and get a well fermented beer at the end. The wlp090 is a was from the 5th generation of this yeast. I have so far with this yeast I have consistently got 75-76% attenuation.

Got a great break today as I'm back on protafloc tabs instead of the granules! I seem to get much better results with the tablets so I'm sticking with them! :D

You initially had me worried when I started reading your post, 1st thought someone else with a brew day on SATURDAY, then looked throught the pics and you had finished already!!! then read the time of the first post...silly me.

Lol! Yeah it was a leisurely afternoon/evening brewday yesterday! Fermenting away like a good un this morning!

I forgot how quickly this yeast works. The krausen has started to fall back into the beer this AM! I'm going to just take a sample of slurry after fermentation and wash it instead. the smell coming out of the FV is utterly awesome! I can see this becoming a regular! :D

Fermentation seems to be tailing off a bit now! Gonna give it till Wednesday then take a gravity reading!

Looking through my hops I'm thinking summit, apollo, simcoe and columbus for the dry hop!
