Well this has got all the way down to 1.007 giving it an apparent attenuation of 89.4%! pretty good! and almost the exact 90% figure lancssteve said he had experienced with this yeast!

So far this beer is still showing no signs of any funky bacteria or wild yeasts, just a strong 'belgian' character!

I will be syphoning 10L, split between two demijons tonight and adding the dregs from a bottle of orval to each one! (mmmm two bottles of orval for me then! :D)

the other 10L will be geting bottled withuot brett! :D

Well the plan has changed ever so slightly! I have added the dregs from two bottles of orval to 1 x 5L demijon. The ther 5L demijon is getting the dregs from a bottle of Mikkeller 'Wheat is the new hops'

A wheat IPA from the Danish 'gypsy brewers' Mikkeller! Just so happens it is fermented with brettanomyces! :D I have no idea which strain of brett this is so it will be good to see if it is different to the Brett b found in Orval! :D

Mmm who knows what's gonna grow (if anything!) I know the pitching rate is goin to be incredibly low for the Brett but does anyone know a ball park for how long a pellicle takes to form?

I'm running a similar experiment with a Belgian style Bruin thats had dregs from Cantillon Geuze Bio added once fermentation finished.

Mine's in a 5 gal glass carboy to minimise contamination.
Various life forms have evolved on top.
I'm sorry I can't remember how long it look.
At one stage it looked like an advanced version on 1st pic below
Surface on mine has now broken up.

Well no pellicle formation as yet but I've just taken a sample out of each of them, almost two months to the day that the brett was added! Oh yeah, it's definitely there! :D

In a side by side with a non brett'd bottle there is definitely brett in both the others. The Orval has a stronger brett flavour than the Mikkeller but that's probably down to the fact it got two bottles worth.

Going to leave them another month then bottle! :D

Sounds interesting. I must do something with my brett'd Bruin too.

I got Wild Brews for Father's day :) .

Very interesting read with lots of info on brett etc.
