Deuchars IPA
Time to pop my Cherry, Started at 8.30am, the Mash is now on at 9.20am :) I'm going to do a 90 minute Mash and a Boil of 60 mins... which should hopefully time well with the Bacon & Egg butties for breakfast with the other half ;) *so we can actually use the cooker and grill 'cos its not got a fecking huge pan on it!* :roll:
I've just slightly over estimated my grain weights to be on the safe side as have I with the Batch Sparge volumes using DaaB's Batch Sparge Calculator.

Fermentables:
Maris Otter Malt 2180 grams
Crystal Malt 105 grams

Hops:
Fuggle 9 grams @ 60 mins (FWH)
Aurora 9 grams @ 60 mins (FWH)
Willamette 9 grams @ 15 mins
Bobek 10 grams @ 5 mins
Fuggle 9 grams @ 5 mins

Copper Finings:
Protafloc Tablet - Last 15-20 Minutes

Predicted stuff:
Final Volume: 12 Litres
Original Gravity: 1.043
Final Gravity: 1.010
Alcohol Content: 4.2% ABV
Total Liquor: 18.5 Litres
Mash Liquor: 5.7 Litres
Mash Efficiency: 75 %
Bitterness: 33 EBU
Colour: 15 EBC

Pre-heating the Mash tun with hot tap water, good pinch of Sodium Met treating the Hot tap water in the FV

Grain Temperature 18.5 Deg C

The Maris otter malt and Crystal Malt

Water at Strike heat and Grain ready to mash

Strike Temp, tweaked with a dash of boiling water as I decanted from the boiler with a jug and lost a few degrees

All tucked up and monitored with a cheap Fish Tank thermometer from Dealextreme.com :)

Wort to the Copper:
End of Mash period, I actually went 15 minutes over the planned 90mins

First runnings, which are returned to the mash until it runs clearer (Which was at least 3 Litres)

hi there ptdnc,

I'm interested to know what size pan you're using for a 12 litre batch. I've ordered a 20l pan, and would ideally like to do half-size batches with it (BIAB style). Will 12+l of boiling liquid + foam + hops etc boil over in a 20l pot, do you think? Perhaps I should try 1/3rd size or perhaps 2 gallon to start with.

Hi,
I'm actually using a 38 Litre Stock Pot, in preparation for a full 5 Gallon brew, so I'm less than half filling it at the moment :)

Looking great so far ptdnc!

Stay cool and everything will go smoothly. The first AG is always the most nerve jangling, but also the most fun. The recipe looks similar to mine yesterday, minus the crystal. I like that wee aquarium thermometer too!

Thanks... The Fish tank thermometer only goes up to 70 C so its pretty perfect for a Mash monitor :)

I'm on the boil now with FWH's in :)

Ive just racked my Deuchars IPA which I did last Sat... clear as a bell, FG1006 and really tasty.. First beer using CRS, Looking good so far..

I used S-04 although US-05 could be interesting and citrus(y)

US-05 for me - I will fire some gelatine into the corni when I rack it - last time I did that with US-05 it was clear after 24 hours!

All done, not bad for about 6 hours, not including cooping time as it will be a while sat in cold water i the bath :)
And all pretty stress free, I'm glad I have been doing some extract brews as its got me fairly confident with the boiling and hop schedules, the Mash was a piece of cake with no problems.

Lessons learned:
I need to do is calibrate all my buckets and my boiler pot.
It would be handy to have an IC.
HLT isn't necessary for the moment.

Mash details:
about 18-20 Litres collected @ OG 1022 / 62.1 Deg C

In the FV:
Final Volume was about right looking for my 12 litre brew length, maybe slightly more than planned which would probably be due to Sparge Volumes / 60 vs 90 minute boils.
OG 1026 / 72.8 Deg C

I think this makes my efficiency pretty good. :)

OK... can anyone offer advice...?

Last night the Cold Break material was obviously settling into a layer at the bottom of the FV after being cooled in the bath, Pitched rehydrated s-04 @ 24 C...
This morning there is no Cold break layer and it looks to have slowly started fermenting which has brought up all the Cold break to the surface... None of the usual fine layer of white at the base of the FV like I'm used to with Extract brewing or kits.

anyone? will this settle back to the bottom as it ferments? Thanks

That is normal mate - as the yeast starts to ferment, especially one like S04 that is not truly top working, there is a lot of movement in the FV and things don't stay settled for long. Once the initial burst is over, things will settle again and as the yeast drops out of the beer, it will drag all the crap with it.

sounds and looks good. I did this brew a few weeks back and it tasted lovely, although i used the GW recipe which could have possibly done with some more hops - your schedule looks a little better. The only thing that id noticed when compared to the real thing was that its quite a bit darker so im gonna try again but swap out crystal for caramalt and see what happens.

When i did this with the S-04 i experienced the same thing you seem to be, i.e. the turb floating on top - wouldnt worry about it id just put it into a secondary or via a bottling bucket to remove most of it. The only problem was mine was finished 2 weeks after bottling and got a good reception with friends and family - possibly too good as i only got to drink 6 myself :(
