Where did you get the hop schedule from?
I think they mentioned last week that the late hops go in at 0mins for a 30min steep... or at least that was one brew, might not have been this one. I suppose that give the flavour and aroma plenty of time to infuse.

I got the recipe from the back of the bottle, but the IBU and hop schedule were not on it (only grist %, OG and hop variety) so the IBU and schedule are of my own making. May split the late hops and steep at 80! just sparging at the mo!

You'll be able to fill us all in soon matey! 5 weeks left is it? Talk about christmas coming early for you! :D :D :D

Well that's that almost done. Just letting the trub and crap settle now. I had a bit of a weird sparge, think I got an air lock on the second sparge and all the crap that i'd filtered out with recirculation bloomed up into the wort. I had to recirculate again and I think the mash temp dropped so I ended up with 25L @ 1.041 pre boil instead of 28L @ 1.033.

I'm not one for dilution so I've left it.

I'll just have to put up with a higher ABV      what ya gonna do?? :D

As promised here is the brewing porn!
Image
this is the first brew I've done with a full liqueur treatment. CRS, Gypsum, campden tabs, epsom salts and calcium chloride. I think it was worth it. This was the clearest wort I have had from the boiler. :D

Image
Newly organised speciality malt box. got sick of rumaging through bags to find what I wanted. I spent the other day inputing it all into BeerAlchemy's inventory feature so now I can hopefully practice some good stock control :)

Image
the MO and Wheat malt

Image
Grist + 1tsp Gypsum

Image
pH probably a little too high. It looks alot bluer in this photo. It was prob about 5.3-5.4 eyeballed

Image
got a good syphon on the sparge again

Image
filth

Image
the rest of the water treatment. 7g gypsum, 2.5g salt, 2.5g epsom salts, 4.5g calcium chloride all added to the boiler.

Image
10g first gold added as FWH

Image
The rest of the hops. 20g FG, 30g EKG, Protofloc

Image
boil

Image
Cold break forming

Image
resting for 30 mins. Just enough time to eat tea and have the first pint of the chocolate coffee stout from a few weeks ago. Only just kegged it tonight so still under carbonated. Will need a couple of weeks in the garage to condition I think.

Image
Very clear wort going into FV. Some fine sieve holding action by SWMBO! :D :D

Image
A sample of the wort. A few bits of trub started to come though as I took the sample, I really need to improve the filter!

Image
boiler filth!

Image
1 pack of Nottingham pitched and aerated. This will be my first use of Nottingham yeast so very interested to see how this turns out!

Well Not a bad brewday. Ended up with 16L instead of 19, but I was 2L short on sparge water and I thinkg the airlock balls up during sparging accounted for the rest of it!  Oh well I'm sure it will be fine. Ended up at 1.051 instead of 1.042!

 yeah, well they are nitrile! I wondered how long it would take someone to notice that!. I'd been cleaning and sanitizing the FV. I get very bad dermatitis if I get detergent or idophor on my hands, and I can't wear marigolds as they have latex in :(

If I didn't wear the nitrile gloves my hands would look like a lepers' by this morning

I've got this in the corni now. Had to put it in to free up some space for all the brewing I've been doing lately. Also, if this is in the corni it means I wont be tempted to drink my chocolate coffee stout I'm trying to save for christmas but have somehow managed to drink about 8L of    . the problem is it is still a little cloudy, taste awesome though. I have never used Nottingham before but it seems to be less flocculant than S04. Can I add gelatine finings to a beer in the corni that has already been gassed? or should I just put up with slightly cloudy beer? cheers LB
