Had this on the go today. gonna give my brother a crate for his birthday, and keep the other half for myself :D :D :D :D

good luck with it.

just had a pint of mine a minute a go. it's a lush drink indeed.
think I used nottingham with mine, and its brought the flavours out.
gone off s-04 recently in favour of that.

either way, its a decent brew.

Just had a samlpe out to test the SG and it seems to be being a bit slow, even though it went off like a rocket! :shock: It's now at 1.026 after 1 week (brewed and pitched on the 3rd Dec). I've roused it tonight and the airlock is going again about ever 13 secs. Will this restart give off any 'off' flavours? Really want this to come good as half of it is being bottled as a prezzy for my brother! Bit of a gamble using a liquid yeast for the 1st time! :oops:

Should be fine - I hear the Ringwood yeast strains often need a bit of rousing to get them to attenuate fully and not drop out prematurely. The bubbling airlock may not be directly from fermentation, but it could be gas released from the beer - don't rely on the airlock to tell exactly when the ferment is over!

just put this into the corni to be gassed up and then half bottled for my borther. FG got down to 1.018 :D :D :D :D 5.8%ABV Taste is very good. Very happy with this batch. :D :D :D

that has had a good while in the FV, probably a good job you used a Liquid yeast...
I'm occasionally finding the dried stuff seems to drop out and die a little before its carbonated the bottles quite enough, I'm going to be tempted to bottle todays brew almost as soon as its finished.

I found that with the dried yeasts when I started using protofloc and upping my boil time to 90 mins. Maybe a coincidence though. Ended up with a couple of batches of under carbonated bottles. I haven't bottled since as I have a couple of corni kegs now. :D

Well this has been gassing up on 40psi since 01/01/10, bottles are being washed today, labels designed and then bottled on wed 06/01/10. I know it's not an ideal period of time under gas but I think the increased pressure plus the fact that both my brother and I are not too fond of over carbonated beer (we find that most commercially bottled ales are too gassy) should make it all ok in the end [-o< [-o< [-o<

Had a sample from the corni last night. Man this is a good beer. The difference between this batch and the last is quite profound. The maltyness is awesome. I don't know wheather to put this down to the liquid yeast, or the fact that I treated the water properly for this batch, or a bit of both but I has turned out a cracker. :D :D It has carbonated well and will be being bottled on Wednesday

As I brewed this for a present I wanted to come up with a nice label so I have renamed this brew 'Swaledale Ale'

Adobe illustrator for the majority of it, vectors, text etc, and photoshop to touch up the image of the dale before pasting it into illustrator. :D
