Lazy Jane Pale Ale 7/3/2010 - with Video Goodness

(OK - so the video is going to take an hour or two until it's processed and uploaded.....but it's being done, honest... First go at making a video, with a little Flip Ultra HD I got given. The problem is, it only shoots HD video, so the file sizes are huge and so the processing takes ages to cut it down to a lower resolution to post on the web.....)

Today I brewed an all Cascade Pale Ale, using late hopping only as I wanted to try that. This should be a real Cascade Based Area Denial Weapon:

Lazy Jane Pale Ale

Grist:
5Kg Pale Malt
50g Wheat Malt (all I had left)
100g Torrefied Wheat
250g Medium Crystal Malt

Hop Schedule:
US Cascade 7.6% AA 70g 15 minutes
US Cascade 7.6% AA 50g 10 minutes
US Cascade 7.6% AA 50g 5 minutes
US Cascade 7.6% AA 43g 80C steep (the 43g finished up the pack I had - was meant to be 30g)

Yeast was US05, water treatment was CRS to 20mg/l CaCO3, 1tsp gypsum in each of mash and boil.

RIMS profile was: Mash in at 50C, ramp to 66C, hold at 66C for three hours (had stuff to do), ramp to 77C, mash out.

All went well(ish).....I had another mega efficiency day at 92.6% and ended up with too strong a wort. But then the hops held about 3L of it. I also think that you get more evaporation with no early hops....anyway, I ended up collecting 20L at 1060 and dialed it back to 23L at 1052. The sample tastes great.

Beer alchemy says this should end up at 40 IBU which will be perfect.

Too lazy and fermented-grape-juiced to work out the IBU's on this edible beast, what have you reckoned adm?

Should be good enough to snort right out of the glass once it's done. Same approach as me today, just using up what's left before a splurge! I've saved enough brew funds for some new bits of kit and also to get my teeth into craftbrewer! I've been something of a New World Hop Denialist like I was with wine (educated on Bordeaux it was easy to do) but in the last 3-6 months I've been utterly converted....(i'm still a Styrian whore at heart though).

Video will be cool, looking forward to it.

How long did you boil for? Presumably you just need to boil long enough to sterilise your wort before your first addition and then 15 minutes later you're done...no?

I keep inhaling my fv there'll be nothing left soon....must....leave...alone. Back to the South African white for now as the HB evaporated, getting a taste for it which is handy as I'm off to visit the in-laws there for the whole of April, mercifully they're not Afrikaaners.

Well, I did my standard 90 minute boil. I presume you could do it quicker if you're doing all late hopping, but I have no idea how that might affect the quality of the beer, so I just stuck with what I know.

SA is a beautiful country. My dad lives there and I have been many times. It's also really nice and cheap - or at least it was last time I went....

Yeah, I was just wondering as I may have read somewhere that the purpose of the boil was for the bitterness really. Flipping everything on it's head as you've done it could be that you could have a very quick boil, or I'm getting everything confused.

SA is truly a beautiful country indeed. I had 3 fantastic months there a few years ago when it was 17R to the £ (god damn you hung parliament rumours!) and travelled up and down. I've never been to a place with such diverse and interesting landscapes, not to mention the food and wine...beer needs a rethink. Shame that crime and violence is such a huge issue there otherwise I'd be there in a heart beat. I never experienced anything on a personal level but the constant theft of electricity cables for the copper was a real annoyance.

Where is your old man based? Cape area is probably my favourite bit but as my Mrs is from Gangster Province (Gauteng) it's a bit of a schlep in the car. Will be going to Kwazulu Natal for 10 days though as it's apparently got some very nice weather this time of year. Will be swimming in shark netted shores only after that British Chap was scoffed by a Great White the size of a mini bus.

Great stuff! Shame you just missed Oscar season, you'll have to wait 'til 2011 for your 'Best brewday video in the pale ale category' nomination.

I think I'm going to get one of those paint stirrer attachments... that just looks too easy.

good video mate. ever thought about building a hopbacker? since you have all the pumps and chillers necessary for it to work and might reduce hop usage, reduce your brewday as you woulldnt need to wait for the temp to reach 80oC and may well increase your hop aromas.

also while i like your paint stirrer, why not use the custom made firewood mash paddle?!

@Chard....I've actually got a hopback, but I never really used if after the first few brews with it. I should dig it out again and have a play with it. As for the mash paddle....it's a work of art and will be hung in the brewery once I paint the walls - it's nothing so mundane as a tool!. The paint mixer is easier to use and clean....

@Dave....the problem with having too many hops in the fridge.....is that it means I'm not brewing enough beer! Must. Try. Harder.

a very calm and collected brewday by a confident brewer! if you have taught me one thing it is that everything doesn't need to be a mad panic!!

but in any case i learned a lot more from the video =D> =D> =D>
i'm almost ready to do my first ag! and as such i've been concerning myself with learning the basic brewing principles required to achieve a good brew. i've read a lot about rims and herms etc but not really paid a great deal of attention because i viewed it as a step to far for me currently.
it was therefore very enlightening to see your system in action and in the future i will no doubt be working towards a similar system (the automated temp regulations must be a godsend! much less to worry about) and therefore i apologise in advance because i will surely pester you for advice when the time comes. (its all your fault! you painted a big target on your back with such a good video)
