Extract #4 - Clown Tears (Galaxy/Amarillo Weizen speed brew)
Got home 15 minutes ago and thought "**** it! I'm gonna brew tonight!". Possibly because I've been mucking around with a new fermentation temperature controller in the past week, and decided to give it a go.
I already have 3 recipes queued up for quick brewing in the future, so I've picked out a weizen with some American hops, and the water is on!!!

If all goes well this should be in the fermenter and nearly cleaned up at about 1030.

Boil done, cooling in the sink now, just about to test gravity before I do any diluting with water.
Purchase of steel ruler to help measure volume was a good decision, as I now have a much better idea how much I'm boiling off and losing to trub.

And I'm done, except for the last little bits of clearing up.
Running a few minutes late due to faffing with the temperature controller and a call from the girlfriend when I was ready to put it in the fermenters.

Decided to be brave and bump it to 22-23 degrees after taking some advice from a brewer that has used this yeast before...

I think the yeast may have picked up on the speed fermenting theme - there was a good half inch of foam on the top and plenty of bubbling from the end of the blow off tube.

After seeing fermentation well on its way within 8 hours, I guess I shouldn't be surprised that I come home 70 hours after fermentation started to find that it's largely done. That's quick.
A quick sample reveals it's down to 1.014 (1.013 was predicted FG), and I'll imagine that it'll be done very soon.
Sampling from a glass reveals a fairly traditional yeasty/wheaty/peach aroma (ala Erdinger) with a hint of fruity hop. Taste wise there's more of the same, with some clove and orange, but none of the stronger banana or bubblegum I thought might come from the warmer ferment. Nice bit of sweetness, and the bitterness is very light but not non-existent - exactly as I wanted. Colour is less of the blond and more of a slightly darker dirty blond. Pretty happy with it all in all.
Going to lightly dry hop it when the fermentation has completed in a couple of days, but I'm not sure how long to leave before bottling - I kind of feel that this is going to be ready to drink out of the fermenter at the end of the week.

I decided in the end to dry hop this too with a few grams of Amarillo and Galaxy.
When I say 'dry hop' what I actually mean is I puréed the hops with some boiled water and dumped it into the fermenter, where it will set for 3 days. I did this because I've found that pellet hops are vastly more effective in dry hopping than leaf hops due to the way they drop into the beer and break apart, and I wanted to try and reproduce that.
I now realise I may have caused myself a problem as it might be a bit difficult to keep the hops bits from ending up in the bottles and that this could be an unnecessary addition to my beer.
Still, nothing ventured...

As expected, hop bits floating everywhere at bottling time. Cue a frustrating hour trying to filter it out (and not really succeeding). Worse still, I think that the dry hopping was hop overkill.
I'm going to rebrew this in the near future, and avoid the dry hops.

This might be the final update on this one.
First proper tasting after a week and I felt the hops had completely overpowered any yeast taste. Boo.
But now two weeks after bottling the hops have faded a bit and the tastes have come together nicely - while the nose is mainly hops, the yeast is there too, and the taste is again a combination of big hop with a subtle yeasty hefeweizen twang, and a gentle bitter finish. Really nice, probably 60/40 on the side of American wheat than Hefeweizen.
I guess the next time I do this there's two ways I may alter the recipe:
1. Drop the dry hops and maybe shift the 5 min hops to be an aroma steep. This'll lessen the hops overall, reduce the IBU a little and shift the recipe more towards Hefeweizen.
2. Leave the hops as is, and just up the alcohol content. I figure at 6.5-7% this could have a nice alcoholic bite to it which would match the hops nicely.
For the time being I'm going to give this 4/5 on my taste meter.
