AG whatever: Mash hop experiment
After the talk a few weeks back with the Manchester Homebrewers group I was inspired to have a go at mash hopping and see what happened. So today was APA day....
The recipe:
5.00 kg Maris Otter
0.25 kg Biscuit
0.25 kg Crystal
0.25 kg Munich
25.00 g Cascade [6.80 %] - Mash 60.0 min
20.00 g Amarillo [8.50 %] - Mash 60.0 min
10.00 g Chinook [13.00 %] - Mash 60.0 min
20.00 g Cascade [6.80 %] - Boil 15.0 min
15.00 g Amarillo [10.90 %] - Boil 10.0 min
15.00 g Chinook [12.40 %] - Boil 10.0 min Hop
30.00 g Chinook [12.40 %] - Boil 5.0 min Hop
35.00 g Amarillo [10.90 %] - Boil 0.0 min
20.00 g Cascade [5.50 %] - Boil 0.0 min
20.00 g Chinook [12.40 %] - Boil 0.0 min
Mash was greenish and smelled more like crushed leaves than normal hop aroma.....
Then I went for hop bursted insanity in the last 15 minutes of the boil....
From left to right the 15 minute, 10 minute, 5 minute and cooling addition. The last batch was added at 80C and cooling was stopped for 15 minutes.
Hopefully this one should be a bit hoppy.....

I think you could say 'Hoppy' would be the right description.... Dry hops maybe??

I was reading a bit about mash hops recently after being a bit sceptical and from everything I read I got the impression that it would only be noticeable if the late hopping was quite low. Won't it be lost with all those hops?

Possibly, I was talking to a pro brewer a few weeks back who swears by it, claims it adds another layer of hop flavour that lasts better than dry hopping.

I'm really interested to know how it turns out. What I read about the technique seemed to make sense but you also get a lot of people that seem to be unconvinced. I was looking at an East India Porter recipe that called for mash hops and I was struggling to work out whether I should add them or not and whether it would make a difference.

looking forward to hearing what happens- still think adding at first wort is more sensible but mash hopping is also meant to sort the mash ph out aswell... will give it a go if i ever order a 5kg bale

The results of this experiment are a pretty decent beer with good malt flavour but next to no hop aroma. I don't think I will bother with mash hopping again unless someone can convince me otherwise.

I'm amazed, not by mash hops not working, but that that much hops late in the brew gave next to no hop aroma, particularly those hops which always give really lovely aroma, I would like to know what happened here as I fancied experimenting with hop bursting to see if it would intensify aroma. I have relied a lot on dry hopping in the fermentor, late in fermentation, and then again in the keg so wonder if this is where it is coming from. Some of the arguments for mash hopping relate to mash chemistry, improved lautering, body, and mouthfeel; none of which will appear in the final flavours and aromas, per se. So don't despair if you can't exactly taste a difference. If you get a slightly better efficiency than usual, with a nice, smooth-flowing sparge, consider it a success.

I did also do a 15 minute 80C ish rest during the cooling process which may not have helped. Bad scientist me changing two things at once.
