AG#9 Old Speckled Roosta

Based on a few OSH clones on the interweb but using Pilgrim for bittering and adding Sovereign to the aroma and flavour hops which seems to add a little vanilla.

Overnight mash to be started in an hour or so and the boil will be done tomorrow morning.

Hit an efficiency of about 85% should be about a 6% beer

4 weeks after bottling this tastes nothing like OSH. The Pilgrim hops come through and there a slight black treacle taste with a hint of vanilla.

I am now calling it just Roosta, its a lovely pint already but I suspect there is still some improvement to come so I shall try to leave it for winter drinking.

You're probably right. Black Malt can take awhile to harmonize. Still, I'm impressed by your self-control. My India Porter is technically too fresh, still a tad rough and roasty, but I can't stop drinking it anyway. What if I wait too long and forfeit the hoppy blast? :)

LOL,

I've a PB of Columbus single hopped (over hopped) IPA which took an age to become drinkable, I'm determined to finish it before getting stuck into the "good stuff". I'm thinking how good this will taste at Xmas.
