My first SMASH recipe! Got 100g Kazbek hops from the Malt Miller for £2.00 so decided to use them all in a pale ale. Recipe below.

Rock the Kazbek

Date: 17th April 2014

Gyle Number: 17

Fermentable Colour lb: oz Grams Ratio
Pale Malt 5.5 EBC 8 lbs. 6.0 oz 3800 grams 100%


Hop Variety Type Alpha Time lb: oz grams Ratio
Kazbek Whole 5.6 % FWH 0 lbs. 0.9 oz 25 grams 25%
Kazbek Whole 5.6 % 15 mins 0 lbs. 0.9 oz 25 grams 25%
Kazbek Whole 5.6 % 10 mins 0 lbs. 0.7 oz 20 grams 20%
Kazbek Whole 5.6 % 5 mins 0 lbs. 0.7 oz 20 grams 20%
Kazbek Whole 5.6 %0 mins 0 lbs. 0.35 oz 10 grams 10%


Final Volume: 23 Litres
Original Gravity: 1.041
Final Gravity: 1.009
Alcohol Content: 4.1% ABV
Total Liquor: 36.1 Litres
Mash Liquor: 9.5 Litres
Mash Efficiency: 79 %
Bitterness: 30.86 EBU
Colour: 7 EBC

75 min mash and 60 min boil.

Ferment with St. Austell yeast 2nd gen. (900ml starter)

Very windy day which seemed to damp down the boil a fair bit. I think this reduced the amount of boil off so ended with 23.5-24 litres at 1.040.

ha i did the same with the same name! still on the to do list though so i'd love to hear how it turned out for you. kinda excited by the description on them, how did they come across while brewing?

I can't say I noticed much of the zesty aromas and flavours they are supposed to have, but hoping they will come through in the finished product. I originally planned to dry hop, but decided to throw in the last hops at 0 mins instead. Maybe a mistake, Will have to wait and see.

Just discovered that Redemption Brewing do a 4.0% blonde ale called Rock the Kazbek!

hey charlie, how did this turn out? getting a smash on the go on next week as a yeast growing brew (wlp005) and thinking it may be time for me to use the kazbeks. did they lend themselves well to this brew? any advice on using them?

Hi,
Drinking one tonight. It has turned out quite well, slight citrus flavour, sort of lemony, quite a bitter finish. Initial taste is a little watery, but that may be due to using all pale malt. It improves as you drink. I suspect it would be improved with some dry hopping, but it is a nice, refreshing summer drink nonetheless.

Tell me more about the Kazbek hops, if you can. Haven't had a chance to personally use them yet. What do you think of their bittering quality? How might you compare and contrast the flavours/aromas to other familiar hops? Now that you've tasted a single-hop Kazbek brew, which hops might you combine with it next time?

Looks like it was a great brew, lovely colour and your tasting notes are making me a little bit jealous. It's certainly made me want to use Kazbek hops in a future brew, lots of ideas going around the old noggin!

Hi Seymour,
Not too sure that I am qualified to answer all your questions, but I'll try. They are quite a low alpha hop at 5.6%, but seemed to work okay for bittering in this brew. I suspect they would be better used as flavour/aroma hops though, with a higher alpha hop for bittering. I would like to try them with Challenger or Northdown for bittering. Not sure what I would compare them to. They have a definite, but subtle citrus flavour, though nowhere near the levels of U.S. hops. I think the beer would have benefited from dry hopping to improve the aroma.
I found this Czech hop report (below) which you may or may not find interesting. It includes some data on dry hopping with Kazbek compared to other Czech hops and some flavour profiles on a variety of Czech hops.

sounding alright charlie! just sparking up the boiler now, recipe very similar to yours actually with regards gravities malts and hops, though weighted a bit more towards the late additions as wlp005 seems to dull the hops slightly, and i chucked a handful of caramalt in to hopefully round it off a bit. they're scenting lovely out of the packet i gotta say!

Yes, the St. Austell yeast seems to be pretty highly attenuative, so I was trying to offset that as I like a bit of residual sweetness in my beer.
