Latest brewday: Centennial & mosaic
Hi all, going to get my latest all grain on later today, as its peeing down, or tomorrow morning.
I was swithering between an all APOLLO pale Ale or a centennial/mosaic pale Ale and the Centennial/mosaic won.
I have used both of these hops in the past with other hops but never combined them. I hope that there is good interplay between the citrus of the Centennial and the pineapple of the mosaic.

Style: American Pale Ale
Batch size: 23.0 l
Boil volume: 29.0 l
OG: 1.052
FG: 1.013
Bitterness (IBU): 44.4
Color (SRM): 8.5
ABV: 5.2%
Grain/Sugars:
4.00 kg Maris Otter Malt, 72.7%
0.75 kg Munich, 13.6%
0.25 kg Vienna, 4.5%
0.25 kg Wheat, 4.5%
0.25 kg Crystal 30L, 4.5%
Hops:
17.00 g Centennial (AA 11.5%, Whole) 60 min, 19.0 IBU
15.00 g Centennial (AA 11.5%, Whole) 10 min, 6.1 IBU
15.00 g Mosaic (AA 12.2%, Pellet) 10 min, 7.2 IBU
25.00 g Centennial (AA 11.5%, Whole) 5 min, 5.6 IBU
25.00 g Mosaic (AA 12.2%, Pellet) 5 min, 6.6 IBU
25.00 g Centennial (AA 11.5%, Whole) dry hop
25.00 g Mosaic (AA 12.2%, Pellet) dry hop
Yeast/Misc:
American Ale yeast, 1.0 unit(s), Yeast
Protafloc 0.25 unit(s), Fining , boil 15 min
I used the rather complex, for me, grain bill in a Citra single hop user upper that I did a few brews back and really enjoyed it.

Sounds a really tasty brew, I must say i have taken up the idea of using Magnum for a bittering base on nearly all of my future brews and adding lots of flavour hops for additions during the last 15 mins. I have 2 X 25kg sacks of Lager malt and Munich next week and El Dorado. Amarillo. Ex 366. Hallertau milf. So i will soon find out doing 50 litres a week. Report back after tasting.

The Kernels Centennial Mosaic is a fantastic beer. My only suggestion would be to drop the Magnum and bitter with centennial.
BTW, have you previously bittered with apollo ? How did you find it ?

This looks like a really good brew to me. I'd personally up the IBUs to match the gravity points, but that's just my preference, not in any way a criticism. I've been using 9% Munich, 9% Caravienna and 3% wheat in mine. I wonder if your grain bill produces a similar result in a different way, maybe 1 SRM darker. I've also been using a functional bittering hop, sticking all the main one in later.

I usually aim for about 44 but I'll have a play about with the recipe and see what comes from that.

Only for bittering, twice. Not sure I'll bitter with it again, not saying it's bad but it was a little harsher than I usually like - I used it for a beer I had made before and the beer turned out a little danker...

Apollo is one of my favourite hops. I've done a couple buttered with magnum and late hopped with Apollo and Herve both been great. Tried it with US05 and WLP002. Strangely the WLP002 was the best which you wouldn't expect with a hoppy beer.

All done, tucked away in the brew fridge with us05 currently swimming around.
I used Centennial for bittering and managed to hit the OG on the button which has given 71% efficiency for my last couple of brews.
Will dry hop next week using my auto syphon and second fermenter for the first time!!

I dry hopped this on tuesday night using my auto syphon and secondary fermenter for the first time which was interesting.
It's tucked away in the brewfridge at 6 degrees until i bottle it tomorrow.
I have updated the recipe in the first post to reflect what i actually brewed.

Disaster tonight trying to get it from the secondary to the bottling bucket.
The muslin bag I used as a hop filter wouldn't let the beer flow so I pumped and pumped probably oxidised the whole lot.
After about a litre or so, I took the filter off and it went like stink.
What do I look for in three weeks re oxidisation?
