Hi guys,
I have totally run out of beer, so need to get a few brews on ASAP! Starting with Greg Hughes Spring Beer. Don't think I've had Wai-Ti hops in a beer previously, so looking forward to it. Probably going to condition in the keg and then bottle; due to a house move, I need to get the stocks up.
Recipe:
Batch size = 23 litres
Pale malt = 4kg
Munich malt = 500g
Galaxy = 30g start of boil
Irish moss = 1tbsp 15 mins
Galaxy and Wai-ti - 30g each, 80degree steep
Wai-ti = dry hop 30g
Yeast = MJ West Coast
Brewday went very well overall - I split the day into two due to various childcare/dog duties. Also just sold the house so a brewday was an apt reward for all my DIY work recently. I was using my new HERMS HLT and recirculating the mash for 60mins. I thought I was doing ok until I realised my PT100 RTD sensors are reading about 3 or 4 degrees too low. So I think I mashed at around 60 degrees for 30mins, then attempted to raise the temps for the last 30mins. Only managed a few degrees increase - was only planning on using HERMS HLT to maintain temps, not step mash. Not too sure how this will affect the end beer but time will tell, might be a bit thin in the body?

beer got down to 1.012, so crash cooled for a couple of days, leaving a firm yeast cake. kegged on Saturday after a couple of days of cooling, had a first sample tonight. lovely tropical fruit taste, going to enjoy this one!
