I finally got out to pick some elderflowers this morning, having driven past hedges full of them for the last week or so On the cards were elderflower wine and an ElderWherry.
Stripped down the heads to leave only the flowers (well, nearly only ). For the Wherry I took a half pint of flowers, added a sprinkle of Cascade, bagged these and poured boiling water over this (in one of the wherry tins). I've made the kit short to 20L to beef it up a little.
The rest of the flowers (around 2.5L of flowers) were added to about 10L of boiling water (or vice versa), a camden tab, some citric acid and a big can of white grape concentrate. I'll add the champagne yeast and nutrient tomorrow.
