I decide that I ought to finally brew a bitter . . . for the first time ever! It's a style that I used to overlook somewhat, drawn in by hop-monsters and rich stouts, but I've rediscovered this classic beer style and thought it's about time I brewed one. I've roughly modelled this on Harveys Sussex Bitter . . very roughly!
Recipe:
25L brewlength, target OG of 1.042, 38 IBUs
3869g (92%) extra pale malt
336g (8%) crystal malt
Mash at 68 deg C for 60 minutes
23g Magnum 12.6% for 60 minutes (I know, not in the usual style, but I needed something to bitter with! I expect the flavour will be well muted with the boil length though)
27g Fuggles 3.2% for 30 minutes
27g Fuggles 3.2% for 5 minutes
Whirlfloc tablet for last 10 minutes
Safale S-04 yeast

Slightly over target! Collected 30 litres at 1.042 This will be closer to about 4.8% when it's done I reckon!
Bittering hops weighed out
New steam extraction system working well
30 minute hops
Wort is looking good, nice colour and nice and clear
Chiller in along with 5 minute hops
Finally transfer into the FV
It's now bubbling away very nicely!

Nice pics. I've been contemplating some sort of steam extraction solution but don't have the space or option of using a cooker extractor hood. What's the extractor unit you have hooked up to your ducting there and where did you get it from?
