put on Greg Hughes Milk Stout recipe today cus I want it for Christmas. I added oats to the recipe to see if it makes it even more smooth/creamy.
It's
Pale malt 4.2kg
chocolate malt 300g
crystal malt 300
Roasted barley 200g
flaked barley 200g
special b 200g
Jumbo organic oats 200g
challender 30g @ 60
Golding 10g at 15
lactose 250g @ 10
Brew day went ok and I got 25litres at 1.052 which is lower than expected but I couldn't be bothered boiling for longer and sure it means more beer in the end up! Was toying with the idea of adding vanilla to the fv in a few days, any thoughts?

Re: Milk Stout
I soaked cocao nibs in dark rum for a week before lobbing them in the FV for a week in my recent milk stout.

Re: Milk Stout
I added good quality vanilla extract to a recent Milk Stout. It worked really well - definately reccomend .
Re: Milk Stout
Sounds good. I would have went for pods but if extract works well I'd try it! How much did you add and was it during fermentation?
Re: Milk Stout
I put it in at the bottling stage, same time as carbonation sugar. About 60ml in a 100 litre batch. Can't remember the brand but it was about £8/100ml and highly rated online - from Ocado who have a range of different extracts.
I would say the amount i used is definately 'there', without overpowering. Didn't put it in earlier because i read that the yeast/fermentation will reduce the vanilla impact.
